 At Meat House Gourmet Butcher we offer grain and grass-fed beef. Grain-fed cattle have higher levels of marbling and a slightly sweeter taste. Because of higher levels of marbling, grain-fed steaks tend to be richer in both taste and texture. Marbling, which is generally considered the most prized feature of a high-quality steak, and the most important factor in USDA grading, is less prominent in grass-fed cattle. However, grass-fed beef has significantly lower levels of saturated fat compared to grain-fed beef. In fact, the fat content of grass-fed beef can be compared to skinless chicken.
